Chocolate Protein Mugcake

Christmas is right around the corner and unhealthy treats have been the star of the show at every holiday party and work event. Don’t let the season full of treats steer you away from your healthy eating plan! Below is a protein mug cake recipe that is sure to satisfy your sweet craving and even give you a boost of protein along with it!

Chocolate Protein Mugcake Recipe by Kristin Coggins, RDN (Recipe makes 2 Servings)
Ingredients:
1 scoop chocolate protein powder
2 Tbs. dark chocolate cocoa powder
2 Tbs coconut flour
½ tsp baking powder
¼ tsp salt
1 egg
½ cup unsweetened vanilla almond milk (or any milk of choice)
¼ tsp vanilla extract
Liquid stevia as a sweetener- I only used about a squirt! (1 stevia packet would work also!)

Directions:
Mix all dry ingredients together—combine in the wet ingredients and mix well. Microwave for about 60-90 seconds.
I made two cakes with this – placed half mixture in one bowl/coffee mug and half mixture in another—you want the mug to be somewhat wide so it cooks evenly- I have found that using microwaveable cereal bowls worked well!.
You can top this cake with fruit, a tablespoon of greek yogurt or peanut butter, coconut flakes, etc!
Macronutrients for 1 serving which is HALF of the cake:

Calories: 127, Carbs: 5 grams carbs, Protein: 17 grams protein (almost 2 and a half ounces!), Fat: 5.5 grams fat
