Chicken Cacciatore

Recipe of the MonthWith Autumn upon us and the weather getting colder, the craving for comfort foods becomes more abundant. But comfort foods do not have to be unhealthy and high calorie for us to enjoy.

Here is a comfort food recipe for the crock pot that is easy to make and tastes delicious: (compliments of a CNC patient)

Ingredients:

  • 4 chicken breasts (frozen is fine)
  • 1 jar marinara sauce (find a sauce that has 50 calories for ½ cup)
  • 1 container sliced mushrooms
  • 1 white onion, chopped
  • 1 eggplant, cubed
  • 1 jar capers
  • garlic, oregano, basil (to your liking)

Directions:

Add all ingredients to crock pot and cook. Pour over pasta. If you are watching your starch intake, try sautéed zucchini in place of pasta. To do this, slice zucchini into long strips using a carrot peeler. Sautee the slices in garlic and a little oil.

    Any idea what time setting to set the crock pot to for this receipe? Thank you.

    I do not have a specified time for cooking. I use frozen chicken so I set my crock pot on high for 6-8 hours. The ingredients in the recipe keep the chicken moist so over cooking should not be a problem. Hope this helps.
