OVEN ROASTED VEGETABLES


Ingredients

1 cup broccoli florets
1 small zucchini cut into 1 inch pieces lengthwise
1 cup cauliflower florets
1 yellow pepper cut into thick strips
1/2 onion, thinly sliced
1 garlic clove, thinly sliced
Salt and pepper
Olive oil spray

Directions
Heat oven to 450 degrees
Spray baking sheet with nonstick spray
Place vegetables on tray and spray with olive oil
Season with salt and pepper
Place tray on top oven rack
Roast for 20 minutes until tender
